Aunt Joy's Peach Cobbler

My Aunt Joy called this Washday Cobbler, meaning you had the time to make it when you were busy doing other things. Her Mondays started at 4 AM when she'd get up with my Uncle Wayne, fix his breakfast and his lunch, and off he'd go to make Pepsi Cola's for all of us. The real work started after he left when she'd milk the cow, feed the chickens and come back to the house and get my cousins fed and on the schoolbus. I'd be there for two whole weeks in the summer and she'd have the clothes washed and on the line by 8AM, that's when she'd take a break to visit on the phone with whoever needed "checking on." For the next hour or more, she'd laugh out loud, give advice and listen. That's the secret to a good friend, they really listen. Even if they can't help you solve a problem, you feel better after talking to them. She was a best friend to every person she ever met and could make a mean cobbler!
   
Aunt Joy's Peach Cobbler
1/2 cup butter, softened
1 cup sugar
1 cup flour
1 1/2 tsp baking powder
1/2 tsp. salt
3/4 cup milk
1/2 cup sugar
3 cups fresh sliced Arkansas peaches
Combine butter, sugar, flour, baking powder, salt and milk. Blend well and pour into a buttereed 1 1/2 quart Pyrex dish or cast iron skillet. Sugar the peaches and place over the batter. Bake in hot oven (375 degrees) 30 minutes.
