Fall Muffins


Apple Spice Muffins

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon ground nutmeg (grating fresh nutmeg makes all the difference in these muffins)
1/4 teaspoon salt
2 large eggs
1 cup sugar
1 stick (1/2 cup) plus 3 tablespoons unsalted butter, melted
1 cup unsweetened applesauce
sugar and cinnamon for topping

Preheat oven to 400 degrees, line 12 muffin cups with paper liners. In a large bowl, stir together flour, baking powder, soda, cinnamon, allspice, nutmeg and salt. In a medium bowl, whisk eggs and sugar, add melted butter and applesauce and blend well. Fold into dry ingredients gently, then spoon into paper liners and top with cinnamon sugar. Bake 20 minutes or until toothpick inserted comes out clean. Remove from muffin pan and place on a rack to cool.

  2. Note. to. self.... I baked these at 450 this morning and wondered why they came out a "little too brown!" Not too brown to eat though, good recipe from allrecipes.com Think I will add nuts the next time...

  4. These have 'Fall' written all over them, spicy and good. I'm a big fan of fresh grated nutmeg too, once you taste the difference you never go back!

  8. I just used your Print Friendly feature for this one! It sounds delicious. I even have canned unsweetened apples from last year I could puree and use.

  9. This recipe is also very good if you substitute puree'd pumpkin for the applesauce. I just love muffins, any time of the year.
