Joni over at Red Couch Recipes had a Girard's Dressing Giveaway recently and I was one of the lucky winners...WHOO~HOO! I go daily and see what she has posted, she has some great recipes on her blog! When the package arrived I was thrilled to see my favorite Champagne dressing along with 3 others that were new to me, Apple Poppyseed, Creamy Balsamic and Peach Mimosa.
If you go to their website, Marzetti has some great recipes using the new flavors! This one calls to me because:
#1. We are a Tyson Chicken family.
#2. We are trying to eat lighter meals these days.
#3. I can't wait to try out the Apple Poppyseed dressing!
Apple Chicken Salad
Crunchy, sweet and savory. This delicious salad has it all. Just combine Girard’s Apple Poppyseed Vinaigrette with chicken, Granny Smith apples, celery, dates, pecans, cabbage and salad greens.
Prep Time: 25 minutes Cook Time: 7 minutes
1/2 cup Girard's® Apple Poppyseed Dressing
1/2 cup pecans
2 cups shredded cooked chicken meat
1 large Granny Smith apple, diced
1/2 cup chopped celery
1/2 cup chopped dates or favorite dried fruit
2 cups chopped cabbage
4 cups mixed salad greens
1/4 cup peels of aged white cheddar cheese
salt and pepper to taste
Preheat oven to 350 degrees F. Place nuts on a sheet pan and bake 5 to 7 minutes or until nuts are toasted. Cool and chop.
In a large bowl, combine Girard’s Apple Poppy Seed Vinaigrette, chicken, apples, celery, dates, pecans and salt and pepper. Add cabbage and salad greens and gently toss.
Top salad with cheese and serve.
